Roasted Potatoes with Sautéed Peppers and Onions

Ingredients
  

Roasted Potatoes

  • 1 lb small potatoes
  • extra-virgin olive oil, for drizzling
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1 pinch red pepper flakes
  • 1 pinch sea salt
  • 1 pinch freshly ground black pepper

Sautéed onions and peppers

  • 1/2 yellow onion
  • 1 red bell pepper
  • 2 cloves garlic

Instructions
 

Roast the Potatoes

  • Preheat the oven to 425°F and line a baking sheet with parchment paper
  • Chop the potatoes into 1/2 inch pieces and place on the baking sheet
  • Drizzle the potatoes with olive oil
  • Sprinkle the potatoes with the smoked paprika, garlic powder, red pepper flakes, salt, and pepper
  • Toss the potatoes a few times to coat with the mixture
  • Roast for about 30 minutes, or until the potatoes are golden brown and crisp around the edges

Sautée the onions and peppers

  • Chop the yellow onion & red bell pepper into 1/2 inch pieces
  • Heat a small amount of olive oil in a medium skillet over medium heat
  • Add the onion, pepper, and garlic
  • Sautee until soft and light browned, about 5 to 8 minutes, then remove from heat
  • Once the potatoes are done, add them to the skillet with the onions and peppers and toss to combine
  • Season to taste with salt and pepper
