
Roasted Potatoes with Sautéed Peppers and Onions
Ingredients
Roasted Potatoes
- 1 lb small potatoes
- extra-virgin olive oil, for drizzling
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- 1 pinch red pepper flakes
- 1 pinch sea salt
- 1 pinch freshly ground black pepper
Sautéed onions and peppers
- 1/2 yellow onion
- 1 red bell pepper
- 2 cloves garlic
Instructions
Roast the Potatoes
- Preheat the oven to 425°F and line a baking sheet with parchment paper
- Chop the potatoes into 1/2 inch pieces and place on the baking sheet
- Drizzle the potatoes with olive oil
- Sprinkle the potatoes with the smoked paprika, garlic powder, red pepper flakes, salt, and pepper
- Toss the potatoes a few times to coat with the mixture
- Roast for about 30 minutes, or until the potatoes are golden brown and crisp around the edges
Sautée the onions and peppers
- Chop the yellow onion & red bell pepper into 1/2 inch pieces
- Heat a small amount of olive oil in a medium skillet over medium heat
- Add the onion, pepper, and garlic
- Sautee until soft and light browned, about 5 to 8 minutes, then remove from heat
- Once the potatoes are done, add them to the skillet with the onions and peppers and toss to combine
- Season to taste with salt and pepper
