Coconut rice has a mild flavor & is a great addition to a number of dishes.
I like to make this recipe each week as a part of my weekly meal prep to add to other dishes.
Coconut Rice
Ingredients
- 2 cups white jasmine rice
- 1 can (14 oz) coconut milk
- 1 and 1/4 cups water
- 1 tsp salt
Instructions
- Rinse the rice 2-3 times. If possible, soak for an hour. Rinse & drain.
- Add all ingredients to the rice cooker & stir to combine.
- Turn on the rice cooker. Let the rice cook for a full cycle without touching it.
- When done, fluff and serve.
